Chicken Fajitas is one of those meals my husband will ask for often but it just take so much time, so I will put off making them for this reason. I had to find something that was going to give my husband one of his favorite meals but that wasn’t going to keep me slaving over the stove for an hour or more.
So after some thinking, I figured I could probably do some sort of a version of the fajitas that I make now but inside my slow cooker. I will admit my first try at these I used way too much salsa and they were a runny mess. So I know 2 cups doesn’t seem like much but trust me it is.
The things I love about this recipe are:
- Quick and easy to prep
- Leaves my house smelling like it is taco night
- My kids and my husband both love this meal
- Clean up is simple and easy
- 5 boneless and skinless chicken breasts
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1 large onion
- 1 package of taco seasoning
- 2 cups of salsa
Cut up your peppers and onions.
Spray the inside of your slow cooker with cooking spray.
Place a half of the peppers and onions on the bottom of the slow cooker.
Place chicken breasts on top of the peppers and onions.
Pour package of taco seasoning onto the chicken breasts.
Place the remaining peppers and onions on top of the chicken breasts.
Pour the salsa on top.
Cover and cook 6 to 7 hours on low and 4 to 5 hours on high.
Remove chicken and slice into strips.
Add chicken back into the slow cooker and mix together.
Serve on a soft tortilla shell or over rice.
