Meal planning is one of the things that I struggle with. You would think as a stay-at-home mother that I would have this whole daily dinner down pat. Well, I will tell you that it couldn’t be further from the truth.
I have about ten staple meals that I make in my house and frankly we are all starting to get bored. This week I made my monthly Costco trip to stock up for the fridge and freezer. Rather than make tacos, which are usually my go to for ground beef, I decided to mix it up and try a slow cooker meatloaf.
Not only was this super quick and easy to put together, but it was a huge hit with my boys. They are picky little boys and are not big fans of change. So, when Mommy mixes up dinner time it is not always welcome. This time not only did my oldest son comment at how yummy the house smelt when he came home from school, he also asked for seconds at the table.
The things I love about this recipe are:
- Very little prep time, this took me less than five minutes to put together
- I didn’t have to worry about burning my meatloaf (which I tend to do when I bake in the oven)
- My house smelt delicious all day long
- My kids ate dinner without a fight
- 2 large eggs (fork beaten)
- 6 tbsp Ketchup
- 1 envelope dry onion soup mix
- 1 box Stove Top stuffing
- 1 tsp garlic powder
- 1/2 tsp. salt
- 2 lbs lean ground beef
- 3 tbsp Ketchup
Combine the first 6 ingredients in a large bowl.
Add ground beef, and mix well.
Place mixture into the slow cooker, add the last 3 Tbsp of ketchup and cover.
Cook on low for 6 to 8 hours, or high 3 to 4 hours.
